Ingredients
175g butter
4 egg yolks
2 lablespoons lemon juice
2 tablespoons olive oil
4 salmon fillets with skin
Method

Melt the butter in a saucepan and remove any froth. Leave to cool

In speperate saucepan whisk the yolks and 2 tablespoons of water on a very low heat for 2 minutes (dont scramble the eggs!)

Whisk the two together a little at a time. Stir in the lemon juice and set aside.

Heat the oil and cook the samon fillets .

Serve with rice and vegetables of your choice.
