Risotto

Serves:                   ABC

Preparation Time:     15 minutes

Cooking Time:         20 minutes 

Ingredients

1 tbsp olive oil

1 onion, chopped

8 rashers streaky bacon,

250g chestnut mushrooms

300g risotto rice

1l hot chicken stock

Method

  1. Chope bacon and onions and fry them for 5mins

  2. Slice mushrooms and fry for 5mins

  3. Stir in the rice

  4. Add the stock a ladlefull at a time, waiting each time for the stock to be absorbed before adding the next ladle (will take approx 20mins)

  5. Can change the bacon and mushroom for anything!
