Ingredients
1 tbsp olive oil
1 onion, chopped
8 rashers streaky bacon,
250g chestnut mushrooms
300g risotto rice
1l hot chicken stock
Method

Chope bacon and onions and fry them for 5mins

Slice mushrooms and fry for 5mins
-
Stir in the rice
-
Add the stock a ladlefull at a time, waiting each time for the stock to be absorbed before adding the next ladle (will take approx 20mins)

Can change the bacon and mushroom for anything!
