Paella

Serves:                   6

Preparation Time:     30 minutes

Cooking Time:         30 hours 

Ingredients

2 pints stock

2 tablespoons olive oil

1 large onion, finely chopped

2 cloves of garlic, finely chopped

½ a head of celery/pepper/mushrooms (vegetables of your choice), finely chopped

Chicken, fish and mixed seafood

400g/14oz risotto rice

salt and freshly ground black pepper

3 teaspoons of turmeric and paprika

Method

  1. Fry onions, in the olive oil until they turn transparent in large wok

  2. Add the meat and fry until it is all cooked. Add garlic and rest of vegetables, fry gently for 5 mins.

  3. Boil rice until almost cooked and then drain and add to wok. Add stock and rest of ingredients.

  4. Boil until right consistency and everything is thoroughly cooked (approx 20 minutes) .

  5. Serve
