Serves:                   1.5 kg

Preparation Time:     10 minutes

Cooking Time:         10 minutes

Ingredients

700g dried fruit (currants, raisins, sultanas, cranberries)

100g mixed peel

1 small cooking apple finely chopped

125g butter, cut into cubes

225g light muscovado sugar

½ tsp ground cinnamon

1 tsp mixed spice

finely grated rind and juice of 1 lemon

200ml orange juice (or brandy, rum or sherry)

Method

  1. Put all ingredients except juice/ alcohol into a large pan and heat gently until butter has melted

  2. Allow to cool and stir in juice/ alcohol

  3. Can store in sealed contains in a cool place for a couple of months if necessary.
