Ingredients
1 cup of cold strong tea
225-450g dried fruit
2 cups S.R. flour
1 Egg
Method

Soak fruit and sugar in tea over night

Grease and line 2x 1 lb loaf tins

Preheat oven 1500C
-
Add flour and beaten egg to fruit mixture, mix well

Pour into loaf tins

Bake for approx 45 mins. Knife should come out clean. Cool. Wrap in foil. Keep for several days before serving.
