Chocolate Fudge Cake

Serves:                   1 Cake

Preparation Time:     25 minutes

Cooking Time:         30 minutes

Ingredients

Base

175g self-raising flour

2 tbsp cocoa powder

1 tsp bicarbonate of soda

150g caster sugar

2 tbsp golden syrup

2 large eggs, lightly beaten

150ml sunflower oil

150ml semi-skimmed milk

Icing

100g unsalted butter

225g icing sugar

40g cocoa powder

2 ½ tbsp milk

Method

  1. Heat oven to 180C

  2. Mix all dry ingredients of base

  3. Make a well and add rest (syrup, eg, milk)

  4. Beat well with electric whisk

  5. Pour into two cake tins and cook for 30 minutes

  6. Place butter in a bowl and beat until soft

  7. Add icing sugar and cocoa

  8.  Add enough milk to make the icing fluffy and spreadable

  9. When cool sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more butter icing.
