Ingredients
450g fresh of frozen blackcurrants (or other summer fruit)
175g Sugar
150ml water
275ml Double Cream
Method

Crush fruit in sieve over mixing bowl to collect all the juice (do not worry about destalking the currants as this removes the bits)
Disolve sugar with water in saucepan and add to juice
Whisk the cream until it starts to thicken (it must not be too thick! (floppy but not thick))
Put in tub and freeze
After 2-3hrs remove and stir then put back in until you want to eat it
