Coconut Milk Curry

Serves:                   2

Preparation Time:     20 minutes

Cooking Time:         30 minutes 

Ingredients

1 onion

400g sweet potato

1/2tbsp curry powder

1/2 tsp tumeric

250g spinach

1/2 tsp chili powder

1/2 tin coconut milk

juice from 1/2 lime

Method

  1. Fry onion, then add sweet potato, curry powder and tumeric and fast fry until sticks

  2. Add spinach and chili and pour coconut milk and lime over

  3. Put on pan lid and simmer for 20mins

  4. Lid off and reduce for 10mins
