Ingredients
200 g dark chocolate (darker the better)
3 large eggs, separated
40 g caster sugar
Method

Melt Chocolate in bowl over saucepan with boiling water in.

Stir in the egg yolks. Then mix thoroughly with a wooden spoon. In mixing bowl, whisk the egg whites to the soft-peak stage, then whisk in the sugar, about a third at a time.

Now, using a metal spoon, fold a tablespoon of the egg whites into the chocolate mixture to loosen it, then carefully fold in the rest very slowly.

Put in serving bowl

Set for 2 hours in the fridge
