Ingredients
8 oz digestive biscuit
3 oz butter
1 egg
4 oz caster sugar
pinch salt
4fl oz milk
15-25g gelatine
6-8 oz cottage cheese/ philidelphia/ quark
150ml whipping cream
1 dessert spoon lemon juice
1 teaspoon vanilla essence
Method

Crush Biscuits and then melt the butter in a pan. Mix together and put into serving dish. Leave to set.

Seperate Egg

Beat egg yolk with sugar in large bowl over hot water until thick

Add salt (optional), milk and continue to cook until starts to thicken

Dissolve gelatine in 2 tablespoons of water and add to egg mixture and remove all from heat.

Leave above to cook until it begins to set.

Blend the cheese (if using a lumpy cheese it needs to be sieved)

Mix in lemon juice and vanilla essence

In a bowl whisk cream

In another bowl whisk egg whites

Fold cheese into 'custard' mixture

Add cream and egg whites

Pour over biscuits
-
Allow to set (will take 2-3hrs)

Add a fruit layer if desired (blackcurrants work well- if you want a slightly more solid layer then add 10g of gelatine to fruit mixture whilst boiling)
